For optimal health, I use only organic vegetables, non-dairy cheese, and grass-fed Angus beef.
4 individual boats
2 large zucchini
1 lb. grass-fed, organic, Angus beef
I clove garlic
1 small red onion
Fresh cracked pepper
Dairy free Mozzarella cheese (or other)
Prepare oiled glass casserole dish for baking
Use skillet for combining ingredients on stovetop
Cut zucchini in half lengthwise and scooping out centers with spoon.
Using grass fed Angus ground been, begin to sauté in skillet. Add to skillet one large garlic clove, pressed, and one small red onion finely chopped. Add sea salt and pepper to taste. Also chop small and add center section from zucchini that you scooped.
After flavors are combined, scoop from skillet to zucchini boats. Place in olive oiled casserole dish. Sprinkle with cheese. Place in oven. Cook at 350 degrees for 30 min. or until zucchini is cooked.
Since zucchini is round, it may roll around in dish causing meat to come out. Slice a small bit off back of the zucchini boat to form a flat edge to sit on.
